The days are flying right by, and I can’t believe it’s already springtime! We are still a little on the busy side, but we have some fun adventures coming up that should give us a bit of a break. My birthday is tomorrow, Andrew’s is next month, and then our FIVE YEAR ANNIVERSARY is in May. (Yes, I feel ancient.) We’re so looking forward to some more relaxed months, but until then, here’s what we’ve been up to lately. :)
This handsome man has been working like crazy, and he’s basically a rockstar.
I’ve been cooking a bunch more recently, and one of our new faves is this Teriyaki Chicken (seen above) that was absent from Andrew’s plate is less than 3 minutes. (Side note – I used chicken breasts instead of chicken thighs and brown sugar instead of sugar.)
And this suspicious looking but super delicious Creamy Parmesan Chicken is another new favorite.
Sometimes it’s hard for me to find new recipes because I’m so picky, but I tend to just substitute or nix things to make them more Caitlin friendly. ;) This Parmesan Chicken Soup called for crushed tomatoes and pasta, but I used tomato sauce and nixed the pasta. It was still delish! Sorry for the pathetic phone photos.
Oklahoma is finally giving us a few warm days, and that means more walks! I’m super thrilled that daylight savings has brought back longer sunshine in the evenings. :D
Hope you’re not tired of seeing this handsome face. We love when Henry comes to visit at the office!

Jack still hates car rides (especially if the car ends up at the vet), but he rocked his appointment last Friday. The doctor said his joints are great, and he’s at the perfect weight! Holla.
He may still have some separation anxiety issues though. ;)
